We are honored to roast this beautiful coffee from the Huila region of Colombia! Since it's arrival around the shop, we have yet to find a single person with anything negative to say about it. There are certainly lots of coffees to choose from hailing from Colombia, but the Macizo del Guarapas really stands out for us. It was so good that we decided to retire our standby Colombia Supremo as this coffee takes everything we loved about that coffee and elevates it to the next level!
Named in honor of the mountain range and river in the town near Pitalito where the coffee is grown, Macizo del Guarapas consists of around 92 farms ranging from around 3 to 5 hectares. The crop density is relatively low in this area giving each of the trees much more nutrients and allowing the surrounding ecosystem to thrive alongside the coffee growing. Each of the farmers do their own pulping, washing, and a few days of drying before bringing them to the central drying station in town.
The microclimate on the side of the mountain where this coffee is grown provides lower temperatures, more rain, and more shade than coffees generally hailing from this region. And while this does result in the trees having lower yields, this recipe has lead to an exceptional cup of coffee.
We hope you love it as much as we do! We have loved it in all preparations, however, it really shines as a single origin espresso (we have added it to our Knockbox Espresso Blend as a result).
What We Taste: Raspberry, sweet nougat, brown sugar, cocoa. Lively and juicy acidity, very clean cup.
