We are thrilled to present our latest coffee from Brazil, a new direct-trade partnership with UP22 Cafés and the farm Fazenda Paradiso! We have the pleasure of purchasing this coffee directly from Marina, the daughter of Vicente & Martha Pereira who own and manage the farm in Brazil. Vicente & Martha chose to purchase this farm later in life and have taken it upon themselves to show off the best of what the Santo Antonio do Amparo region in Minas Gerais, Brazil has to offer.
Marina in her own words describing the attention to detail in processing:
This coffee is processed naturally. During drying, some level of fermentation always occurs. In this case, we classify it as a natural fermentation since it wasn’t induced in a controlled environment or with added substances. To ensure quality natural fermentation, we closely monitor the temperature of the coffee lot on the patio. High temperatures can lead to undesirable acetic smells and flavors. We maintain control by adjusting the position of the coffee layers based on the sun’s position and keeping a constant eye on the weather, as any unexpected rain can compromise both the fermentation and drying processes.
For those who loved the previous Brazilian coffee, we can assure you this one is only better with absolutely no compromises. We have found it to be pleasant in all brewing methods, and it has even found a spot in both our House & Espresso blends.
Boasting a very full and rich body we taste cocoa hazelnut spread (you know, the stuff in the glass jar, ending in ___ella) with a dancing acidity comprised of various tropical fruits across the palate. But do not fear, we would not consider this to be an overly "fruity" coffee (like the Ethiopia Gargari Gutity), rather it has a very traditional and savory profile. We have yet to find anyone have anything unpleasant to say about this coffee!
Coffees from this region are touted as some of the best that Brazil has to offer and we couldn't agree more!
